Spring onions are regular onions that have been plucked from the ground before they grow to the familiar full-size onion. Milder in flavor compared to the fully grown version, spring onions have a much stronger taste than a scallion -- making them a perfect topping for salads or nice addition to salsas and scrambles
Available year round, best are found in May and June
How to Choose:
Look for spring onions with bright, fresh greens that extend from the base of the root. Roots should be firm and bright white. Avoid onions with wilting or uneven green tops, or roots that are translucent or soft.
Spring onions can be stored in a plastic bag in the crisper for three to four days.
