Spice It Up with Chai

Chai is a type of tea made from Camellia sinensis leaves and a combination of spices. Native to India, chai can be made by adding at least four spices to loose tea leaves. Allow the mixture to come to a boil, and then simmer for about five minutes. Strain and add heated milk. Sweetener may also be added at this point. Common spices to use include cinnamon, cardamom, ginger, and cloves. Pepper, allspice, and fennel are also fun to add to the mix. Try experimenting with your own special blends of spices, and warm up to a good cup of chai.
