Best Granola
15 minutes prep time | Serves 16
Ingredients:
- 4 c rolled oats
- 1 c unsweetened shredded coconut
- 1/2 c wheat germ
- 1/2 c sesame seeds
- 1/2 c soy grits, optional
- 1/2 c sunflower seeds
- 1/2 c flaxseed
- 1/2 c chopped walnuts or other nuts
- 1/2 c maple syrup or honey
- 1/2 c vegetable oil
- 1 Tbsp vanilla extract
- 1/2 c dried cranberries, optional
- 1/2 c chopped dates, optional
Directions:
Preheat oven to 350°.
- Combine all dry ingredients in large bowl.
- Heat maple syrup or honey, oil, and vanilla until warm, stirring to blend.
- Add liquid mixture to dry ingredients. Mix well.
- Spread mixture onto large, rimmed cookie sheet.
- Bake for 45 minutes, stirring every 15 minutes so mixture toasts evenly.
- Cool and stir in dried fruits, if using.
Store in airtight container.
