Easy Tofu Fiesta Scrambler

20 minutes prep time | Serves 4 

Ingredients:
  • 1 Tbsp olive oil
  • 1 pkg Mori-Nu Silken Extra Firm Tofu*
  • 1/3 to 1/2 cup Picante sauce or salsa of choice
  • shredded cheese or soy cheese, if desired
  • *Mori-Nu Silken Extra Lite Firm or Organic Firm Tofu can also be used
Directions: 
  1. Heat olive oil in skillet.    
  2. Pat tofu dry with paper towel and crumble into skillet.
  3. Add picante sauce or salsa.
  4. Stir tofu and sauce/salsa together and heat through, cooking off as much liquid as possible. 
Per serving (filling only): 83 calories, 7 g protein, 3 g carbohydrates, 0.5 g fiber, 5 g total fat (<1 g saturated fat), 172 mg sodium, 0 mg cholesterol.
