Easy Gluten-Free Oatmeal Cookies
- ¾ c butter
- 1 c packed brown sugar
- ½ c granulated sugar
- 1 tsp baking powder
- ¼ tsp baking soda
- ½ tsp ground cinnamon
- 2 eggs
- 1 tsp vanilla
- 1 ¾ c gluten-free flour mix (see ingredient tips below)
- 2 c gluten-free oats
- In a large mixing bowl, beat butter with an electric mixer for 30 seconds. Add brown sugar, granulated sugar, baking powder, baking soda and cinnamon. Beat until combined, scraping sides of bowl occasionally. Beat in eggs and vanilla until combined. Beat in as much flour as you can with the mixer on low. Stir in remaining flour. Stir in oats.
- Drop dough by rounded teaspoons 2 inches apart on an ungreased cookie sheet
- Bake in 375 degree oven for 10-12 minutes or until edges are golden.
