Cheese and Tomato Tart
Makes one 9-inch tart
20 minutes prep time | Serves 6
Ingredients
- 1 ready-to-use pie crust
- 1/4 cup fresh basil leaves, chopped, plus extra sprig for garnish
- 1/2 cup ricotta
- 2 large eggs, slightly beaten
- 1/4 lb grated part-skim mozzarella
- 1/2 cup grated Parmesan cheese
- 4 or 5 (about 2 lb) ripe tomatoes, sliced 1/4-inch thick
- Extra-virgin olive oil
Directions
- Preheat oven to 400º.
- Combine basil and ricotta. Add eggs and blend until well combined. Add mozzarella and Parmesan cheeses. Spread mixture into prepared crust.
- Arrange tomatoes over cheese mixture. Drizzle with olive oil. Bake for 40 to 50 minutes. Cool 10 minutes.
- Garnish with fresh basil. Slice into wedges and serve.
