Cheese and Tomato Tart

 

Makes one 9-inch tart
20 minutes prep time  |  Serves 6
 
Ingredients
  • 1 ready-to-use pie crust
  • 1/4 cup  fresh basil leaves, chopped, plus extra sprig for garnish
  • 1/2 cup ricotta
  • 2 large eggs, slightly beaten
  • 1/4 lb grated part-skim mozzarella
  • 1/2 cup grated Parmesan cheese
  • 4 or 5 (about 2 lb) ripe tomatoes, sliced 1/4-inch thick
  • Extra-virgin olive oil
 
Directions
  1. Preheat oven to 400º.
  2. Combine basil and ricotta. Add eggs and blend until well combined. Add mozzarella and Parmesan cheeses. Spread mixture into prepared crust.
  3. Arrange tomatoes over cheese mixture. Drizzle with olive oil. Bake for 40 to 50 minutes. Cool 10 minutes.
  4. Garnish with fresh basil. Slice into wedges and serve.
