Gluten-Free Chicken Parmesan

40 minutes prep time  |  Serves 6 to 8

  • Olive oil
  • 2 lb boneless, skinless chicken breast halves
  • 11/4 c gluten-free bread crumbs
  • 1 tsp dried basil
  • 1/2 tsp garlic powder
  • Salt and freshly ground black pepper to taste
  • 1 large egg
  • 1/2 c milk
  • 1/2 c rice flour
  • 1 c shredded mozzarella cheese or 1/2 lb fresh mozzarella, cut into 1/4-inch rounds
  • 1/4 c freshly grated Parmesan cheese
  • oz gluten-free pasta, cooked
  • Your favorite marinara sauce
  1. Preheat oven to 400º. Lightly oil the bottom and sides of a large baking dish.
  2. Between 2 sheets of wax paper on a cutting board, pound meat with a meat mallet or rolling pin until pieces are approximately 1/2-inch thick. Set meat aside.
  3. In a shallow bowl or pie plate, combine bread crumbs with basil, garlic powder, and salt and pepper to taste. In another bowl, whisk together egg and milk. In a third bowl, combine rice flour and salt and pepper to taste.
  4. One at a time, dip each piece of chicken into rice flour, then egg mixture, and then bread crumbs. Place breaded chicken pieces in oiled baking dish.
  5. Bake until chicken is cooked through, approximately 15 minutes. Top chicken with cheeses. Bake for 10 minutes more, until cheeses have melted.
  6. Serve chicken over your favorite gluten-free pasta. Top with marinara sauce.
