Skewered Pesto Shrimp
15 minutes prep time + overnight marinate time | Serves 4
Ingredients:
1 lb extra-large shrimp, peeled and deveined
1/2 c homemade pesto or your favorite prepared pesto
Olive oil
Directions:
1. Toss shrimp with pesto in a large bowl. Cover and marinate overnight.
2. Preheat a grill. Brush grates with oil.
3. Thread shrimp onto metal skewers.
4. Grill shrimp until cooked through, about 2 to 3 minutes per side.
