1 lb. firm Mori-Nu tofu, drained & mashed
1 lb. lasagna noodles
1 tbsp Olive Oil
1/4 c. Parmesan cheese, grated
1 tsp. onion powder
1 tsp. garlic powder
1 tbsp. parsley, chopped
1 tbsp. basil
1/2 tsp. sea salt1 qt. of your favorite Pasta Sauce
8 oz. Mozzarella cheese, grated
Preheat oven to 350 degrees.
Boil lasagna noodles for 5 minutes.
Add 1 tablespoon olive oil to boiling water.
Drain noodles and rinse thoroughly with cold water.
Drain and mash tofu
Combine tofu with Parmesan cheese, onion, powder, garlic powder, parsley, basil and salt.
Grease the bottom and sides of a 9"x13" pan.
Place a layer of lasagna noodles on the bottom of the pan.
Spread tofu mixture to cover noodle layer, then cover with sauce.
Repeat layering until all ingredients are used.
Top with grated Mozzarella cheese. Bake for 30 minutes.
