5 minutes prep time Serves 4
- 3 medium-sized zucchini, sliced
- 1 Tbsp extra-virgin olive oil
- 1 tsp Kosher salt
- Preheat oven to 400˚
- Place zucchini in bowl. Add olive oil and salt. Toss with hands.
- Place on parchment-lined baking sheet. Bake 10 to 15 minutes. Chill until ready to serve.
