Beef Barley Soup
Ingredients:
2 tablespoon olive oil
2 cloves garlic, minced
1/2 cup chopped onion
2 celery sticks, chopped
2 carrots, chopped
2 cups of sliced mushrooms
4 cups beef broth
1/4 cup barley
4 ounces stew beef, diced
Directions:
1) In a large saucepan, heat oil; sauté garlic, onion, celery, carrots and mushrooms for about 8 to 10 minutes.
2) Add beef broth, barley, and beef; cover, reduce heat and simmer for 45 to 55 minutes, or until barley is tender, stirring occasionally.
