5 cups of sweet peas
1 clove garlic
2 shallots, chopped fine
2 tbs butter
3 cups vegetable broth
1/3 cup heavy cream
salt and pepper to taste
1. In a soup pot over medium heat, melt the butter. Add the shallots and garlic , stir until cooked
2. Add the peas and the broth. Simmer for 25 minutes.
3. Transfer the soup to a blender and blend until completely pureed.
4. Stir in the cream. Season with salt and pepper.
5. Serve the soup hot or chilled.
