¼ - ½ teaspoon crushed red pepper, depending on taste
8 large eggs
¼ cup milk (prefer 1%)
½ teaspoon salt
¾ cup Feta cheese
Directions:
In a medium, ovenproof skillet, cook bell pepper, onion and zucchini in olive oil until soft (5 -6 minutes)
In a separate bowl, whisk together eggs, milk and salt.
Pour egg mixture into skillet. Cook, scrambling the mixture until almost set.
Top with feta and place in broiler.
Low broil about 5 minutes, or until center firms.
