Apricot Granita

30 minutes prep time (+ freezing time) | Serves 6

What you need:

  • 8 ripe apricots, pitted and roughly chopped
  • 1 Tbsp lemon juice
  • 1 c apricot nectar
  • 1/3 c sugar

What you do:

  1. Place apricots, lemon juice, and apricot nectar in food processor or blender. Puree.
  2. Combine pureed fruit mixture and sugar in medium pot over medium heat.
  3. Simmer for 10 minutes over low heat, stirring occasionally. Add 1/2 cup water and simmer for another 15 minutes, stirring occasionally.
  4. Pour mixture into a large, shallow glass dish. Place dish in freezer for 4 hours, making sure to stir the mixture every 30 minutes.
  5. Before serving, scrape frozen surface with fork to create frozen granules. Spoon into glasses and serve immediately.
