Cranberry-Orange Spritzers

What you need:
For ice cube garnish:

  • 1 c commercially prepared, pulp-free orange juice
  • 1 c cranberry juice

For spritzers:

  • 1 qt freshly squeezed orange juice
  • 1 qt cranberry juice
  • 2 c sparkling water, cranberry-flavored if possible
  • Fresh mint sprigs, optional

What you do:

  1. To make ice cube garnish, select two ice cube trays and pour orange juice into one and cranberry juice into the other. Freeze until solid.
  2. To make spritzers, pour 1/2 cup of freshly squeezed orange juice into each of eight 12-ounce glasses. Add 1/2 cup of cranberry juice to each glass and then 1/4 cup of sparkling water. Add several cranberry and orange ice cubes to each. Garnish with fresh mint, if desired, and serve immediately.
