Gluten-Free Corn Bread

Ingredients:

  • 2 cups milk
  • 2 tablespons vinegar
  • 1 3/4 cup cornmeal
  • 2 eggs
  • 2 tablespoons oil
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • Directions:

      1) Pre-heat oven to 425 degrees
      2) Sour the milk: add 2 tablespoons of vinegar to the milk and set aside.
      3) In a mixing bowl, beat 2 eggs. Add oil and sugar.
      4) In separate bowl, stir cornmeal, salt, soda and baking powder together.
      5) Add the soured milk to the eggs, mix well
      6) Stir in the dry ingredients to egg mixture. Mix lightly.
      7) Pour batter into lightly greased baking dish.

    Bake 25-28 minutes or until set and golden brown.
