Irish Soda Bread
From the Taste for Life test kitchen
20 minutes prep time. Serves 12.
What you need:
- 4 c all-purpose flour
- 2 Tbsp granulated sugar
- 6 Tbsp butter
- 3 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp baking soda
- 2 eggs
- 1 c buttermilk
- 1/2 tsp vanilla extract
- 1 c raisins
What you do:
- Preheat oven to 325°. Grease and flour 2 loaf pans.
- In a large bowl, mix flour and sugar. Cut in butter until mixture resembles small crumbs. Sift together baking powder, salt, and baking soda over crumb mixture.
- In small bowl, whisk eggs and add buttermilk and vanilla. Pour over crumb mixture and mix with a fork. Add raisins. Bread should be a dough-like consistency. (Add more buttermilk, if dough appears to be too dry)
- Spread into prepared pans. Bake 1 hour.
