Irish Soda Bread

From the Taste for Life test kitchen
20 minutes prep time. Serves 12.

What you need:
 

  • 4 c all-purpose flour
  • 2 Tbsp granulated sugar
  • 6 Tbsp butter
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 2 eggs
  • 1 c buttermilk
  • 1/2 tsp vanilla extract
  • 1 c raisins

What you do:
 

  1. Preheat oven to 325°. Grease and flour 2 loaf pans.
  2. In a large bowl, mix flour and sugar. Cut in butter until mixture resembles small crumbs. Sift together baking powder, salt, and baking soda over crumb mixture.
  3. In small bowl, whisk eggs and add buttermilk and vanilla. Pour over crumb mixture and mix with a fork. Add raisins. Bread should be a dough-like consistency. (Add more buttermilk, if dough appears to be too dry)
  4. Spread into prepared pans. Bake 1 hour.
