Apple Jack Pancakes
45 minutes prep time | Serving: 1 6-inch pancake
Ingredients:
1 pkg Mori-Nu Silken Soft Tofu, drained*
1/2 cup whole wheat pastry flour
1 Tbsp. vegetable oil
1 tsp. cinnamon
1 tsp. allspice
2 Tbsp. honey
2 egg whites
1 small apple, peeled, sliced very thinly
Margarine for frying, if desired
*Mori-Nu Silken Lite Firm Tofu may be substituted
Directions:
1. Combine first 6 ingredients and beat with electric mixer on high until
smooth, about 1 minute.
2. In a separate bowl, beat egg whites until stiff but still shiny. Fold
tofu/flour mixture into egg whites. Blend thoroughly.
3. Lightly butter a non-stick frying pan and place several apple slices on
bottom.
4. Pour 1/2 cup batter over apples for each pancake. Fry covered. Brown both
sides and serve hot with your favorite topping.
