Easy Tofu Fiesta Scrambler

20 minutes prep time
Serves 4
 
What you need:
1 Tbsp olive oil
1 pkg Mori-Nu Silken Extra Firm Tofu*
1/3 to 1/2 cup Picante sauce or salsa of choice
shredded cheese or soy cheese, if desired
*Mori-Nu Silken Extra Lite Firm  or Organic Firm Tofu can also be used
 
What to do:
 

  1. Heat olive oil in skillet.
  2. Pat tofu dry with paper towel and crumble into skillet.  Add picante sauce or salsa.
  3. Stir tofu and sauce/salsa together and heat through, cooking off as much liquid as possible.
  4. Wrap scramble and cheese (if desired) in warm tortilla and serve.
