Pepper and Onion Scramble

10 minutes prep time | Serves 2
What you need:
- 4 eggs
- 1 tsp garlic
- 1 tsp oregano
- Salt and pepper to taste
- 1 large green bell pepper, diced
- 1/2 large white onion, diced
- 1/2 c grated cheddar cheese
- Olive or high-oleic safflower oil
What you do:
- Whisk eggs and spices in a medium bowl. Stir in green pepper and onion.
- Lightly coat a medium skillet with oil and heat.
- Pour egg mixture into skillet. Sprinkle in cheese, then scramble and cook until done.
