Pepper and Onion Scramble

10 minutes prep time | Serves 2

What you need:
 

  • 4 eggs
  • 1 tsp garlic
  • 1 tsp oregano
  • Salt and pepper to taste
  • 1 large green bell pepper, diced
  • 1/2 large white onion, diced
  • 1/2 c grated cheddar cheese
  • Olive or high-oleic safflower oil

What you do:
 

  1. Whisk eggs and spices in a medium bowl. Stir in green pepper and onion.
  2. Lightly coat a medium skillet with oil and heat.
     
  3. Pour egg mixture into skillet. Sprinkle in cheese, then scramble and cook until done.
