Potato Cubes with Smoked Salmon and Dill

30 minutes prep time | Serves 4
What you need:
- 1-1/2 lb small baking potatoes, peeled and cut into 1/2-inch cubes
- 3 Tbsp vegetable oil
- 1/8 c chopped dill
- Zest of 1 lemon, finely grated
- Salt and freshly ground black pepper
- 6 oz smoked salmon, coarsely chopped
- Low-fat sour cream, optional
What you do:
- Bring potatoes to a boil in a pot of water set over high heat. Reduce heat and simmer until potatoes are almost but not quite cooked. Drain potatoes and allow them to cool.
- Heat a nonstick frying pan over medium heat. Add oil. Fry potatoes until golden all over. Add dill, lemon zest, salt, and pepper to taste. Add salmon and cook until heated through.
- Serve with optional sour cream on the side.
