Potato Cubes with Smoked Salmon and Dill

30 minutes prep time | Serves 4

What you need:

  • 1-1/2 lb small baking potatoes, peeled and cut into 1/2-inch cubes
  • 3 Tbsp vegetable oil
  • 1/8 c chopped dill
  • Zest of 1 lemon, finely grated
  • Salt and freshly ground black pepper
  • 6 oz smoked salmon, coarsely chopped
  • Low-fat sour cream, optional

What you do:

  1. Bring potatoes to a boil in a pot of water set over high heat. Reduce heat and simmer until potatoes are almost but not quite cooked. Drain potatoes and allow them to cool.
  2. Heat a nonstick frying pan over medium heat. Add oil. Fry potatoes until golden all over. Add dill, lemon zest, salt, and pepper to taste. Add salmon and cook until heated through.
  3. Serve with optional sour cream on the side.
