Bee Pollen Bits

30 minutes prep time (after soaking overnight) | Makes about 20
What you need:
- 1/2 c dried cherries, chopped
- Brandy to soak
- 1/2 c sunflower seeds, chopped
- 1/2 tsp cinnamon
- 1/4 c bee pollen
- 1/4 c royal jelly
- 1/2 c almond butter
- 1/2 tsp vanilla
- 1/2 c sesame seeds, lightly toasted OR 8 oz semisweet chocolate bits, melted
What you do:
- Soak cherries in brandy overnight. Combine all ingredients, except sesame seeds or chocolate bits, and mix well. Chill until firm enough to handle, and scoop into small balls, about 1 tablespoon each.
- Roll in sesame seeds or melted chocolate and chill.
Per serving: 108 Calories, 3 g Protein, 10 g Carbohydrates, 2 g Fiber, 6 g Total fat (1 g sat, 3 g mono, 2 g poly), 4 mg Sodium, Vitamin E, H Vitamin B1 (thiamine), Magnesium, Phosphorus
