Chocolate-Chocolate Chunkers

Nothing beats cookies fresh from the oven, especially double-chocolate cookies. And you get the pleasure of filling your house with their warm, sweet scent as they bake.
1/4 cup (1/2 stick) unsalted butter, softened
1/2 cup dark brown sugar
1/4 cup sugar
1/4 cup canola oil
1 large egg
1 teaspoon vanilla
1/2 cup all-purpose flour
1/2 cup whole wheat pastry flour (or all-purpose flour)
1/4 cup unsweetened cocoa powder (not Dutch process)
1/4 teaspoon salt
4 ounces bittersweet chocolate, coarsely chopped
Preheat oven to 350°F.
In a large bowl beat the butter and sugars with an electric mixer set on medium speed until well combined. Add the oil and egg and beat until creamy. Mix in the vanilla.
In a medium bowl whisk the flours, cocoa powder and salt. Add flour mixture to the bowl of wet ingredients, mixing until well blended. Stir in the chopped chocolate until combined.
Drop dough by heaping tablespoons 2 inches apart onto an ungreased cookie sheet.
Bake 11-13 minutes until set at edges. Transfer cookies to wire rack with spatula. Cool completely. Makes 2 dozen cookies.
