Chocolate Soy Pudding

15 minutes prep time | Serves 6
What you need:
- 1 package (10-oz) light, silken, extra-firm tofu
- 1 c semisweet chocolate chips
- 1/2 c maple syrup
- 1 Tbsp vanilla
- Fresh fruit in bite-sized pieces
What you do:
- In a food processor or blender, puree tofu, scraping down several times until smooth. Melt chocolate in a double boiler or microwave.
- Add the maple syrup and vanilla to the tofu and process to mix. All at once, scrape the melted chocolate into the tofu mixture and process quickly to mix. Transfer pudding to a portable container and chill. Serve with fruit for dipping.
