Easy Gluten Free Oatmeal Cookies
A deliciously simple gluten-free cookie, perfect for a snack or a dessert.
Ingredients:
¾ cup butter
1 cup packed brown sugar
½ cup granulated sugar
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon ground cinnamon
2 eggs
1 teaspoon vanilla
1 ¾ cups gluten free flour mix (see ingredient tips below)
2 cups gluten free oats
Optional: up to 1 cup of your choice: raisins, currants, dried cranberries, chocolate chips, walnuts
(I added ½ cup chocolate chips)
Ingredient Tips:
*Gluten Free Flour Mix: I used Arrow Head Mills Gluten Free All Purpose Baking Mix If you make your own - use a mix recipe that includes potato & rice starch
*Gluten Free Oats: I used Bob's Red Mill Gluten Free Oats
Directions:
1. In a large mixing bowl beat butter with an electric mixer for 30 seconds. Add brown sugar, granulated sugar, baking powder, baking soda and cinnamon. Beat till combined, scraping sides of bowl occasionally. Beat in eggs and vanilla until combined. Beat in as much flour as you can with the mixer on low. Stir in remaining flour. Stir in oats.
2. Drop dough by rounded teaspoons 2 inches apart on an ungreased cookie sheet
3. Bake in 375 degree oven for 10-12 minutes or till edges are golden.
