Colby Cottage Veggie Delight

10 minutes prep time | Serves 8
 

What you need:

  • 1 c Organic Valley Colby cheese, grated
  • 1/2 c carrot, shredded
  • 1/2 c red bell pepper, chopped
  • 1 c Organic Valley low-fat cottage cheese
  • 1 Tbsp green onions, minced
  • 1/2 tsp dried dill weed
     

What you do:

  1. Combine all ingredients in a small bowl. Mix gently to blend. Cover and store in the refrigerator. Spread on your favorite hearty bread or toast. Or wrap in a tortilla with your favorite veggies and sprouts.
     

Per serving: 88 Calories, 8 g Protein, 2 g Carbohydrates, 6 g Total fat (4 g sat, 2 g mono, 0 g poly), 104 mg Sodium, Vitamin B2 (riboflavin), B12, C, Calcium, Phosphorus
