Homemade Applesauce

35 minutes prep time  |  Makes approximately 6 cups

What you need:

  • 6 lb Fuji, Gala, McIntosh, or Pippin apples, peeled, cored, cut into 3/4-inch pieces
     
  • 1 c apple juice
     
  • 1/4 c sugar
     
  • 1/4 c lemon juice
     
  • Cinnamon, to taste 
     

What you do:

  1. In large saucepan or pot combine apples, juice, and sugar.
  2. Cover and set over high heat. Bring mixture to boil and then reduce heat. Simmer covered, stirring occasionally until apples are very soft, approximately 25 minutes.
  3. Uncover, remove from heat, and add lemon juice and cinnamon to taste. Let cool. Mash with a fork or potato masher until desired consistency. Serve cold or at room temperature with potato pancakes.
