Homemade Applesauce
35 minutes prep time | Makes approximately 6 cups
What you need:
- 6 lb Fuji, Gala, McIntosh, or Pippin apples, peeled, cored, cut into 3/4-inch pieces
- 1 c apple juice
- 1/4 c sugar
- 1/4 c lemon juice
- Cinnamon, to taste
What you do:
- In large saucepan or pot combine apples, juice, and sugar.
- Cover and set over high heat. Bring mixture to boil and then reduce heat. Simmer covered, stirring occasionally until apples are very soft, approximately 25 minutes.
- Uncover, remove from heat, and add lemon juice and cinnamon to taste. Let cool. Mash with a fork or potato masher until desired consistency. Serve cold or at room temperature with potato pancakes.
