Love This Nut Mix
10 minutes prep time | Makes 4 cups
What you need:
- 1 large egg white
- 1 c powdered sugar
- 2 tsp vanilla
- 2 Tbsp cocoa
- 1/2 tsp cayenne
- 1/2 tsp coarse salt
- 2 c pumpkin seeds
- 1/2 c hemp nuts (or seeds)
- 2 c whole almonds
What you do:
- Preheat oven to 250°. Line a baking sheet with parchment paper.
- In a medium bowl, whisk the egg white for a few seconds. Whisk in the vanilla and cocoa. Whisk in the seasonings, and then toss the nuts with this mixture. Spread on the prepared pan in a single layer.
- Bake for an hour, stirring every 20 minutes to coat all the nuts. Remove from the oven and use a spatula to lift them off the pan and break up the clusters a bit. Cool completely.
