Love This Nut Mix

10 minutes prep time | Makes 4 cups

What you need:

  • 1 large egg white
  • 1 c powdered sugar
  • 2 tsp vanilla
  • 2 Tbsp cocoa
  • 1/2 tsp cayenne
  • 1/2 tsp coarse salt
  • 2 c pumpkin seeds
  • 1/2 c hemp nuts (or seeds)
  • 2 c whole almonds

What you do:

  1. Preheat oven to 250°. Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk the egg white for a few seconds. Whisk in the vanilla and cocoa. Whisk in the seasonings, and then toss the nuts with this mixture. Spread on the prepared pan in a single layer.
  3. Bake for an hour, stirring every 20 minutes to coat all the nuts. Remove from the oven and use a spatula to lift them off the pan and break up the clusters a bit. Cool completely.

Note: Add or substitute with your favorite nuts for variety.
