The Quickest Rice Pudding

10 minutes prep | Makes 12 servings (1/3 cup each)
What you need:
- 1 pkg 1.4 oz instant vanilla sugar-free pudding mix
- 2 c reduced-fat (2%) milk
- 2 c cooked, cooled brown rice
- 1/2 tsp cinnamon
- 1/3 c raisins or dried cranberries, optional
What you do:
- Whisk together pudding mix and milk until smooth.
- Stir in rice, cinnamon, and fruit (if using).
- Pour into bowl and let set for about 10 minutes. Spoon into individual pudding bowls and serve.
