Yogurt Cheese

2 minutes prep time (+ 4 to 8 hours draining time)
Yield: 1 cup yogurt = 1/2 cup cheese
Place yogurt in a yogurt strainer or in several layers of cheesecloth or a coffee filter placed in a colander. Place the colander over a bowl to drain. The whey will drain off and make the yogurt thicker. Set bowl in refrigerator. When ready to use, discard whey.
