Bright Pepper and Green Bean Stir-Fry

10 minutes prep time | Serves 4
8 oz (2 large) red bell peppers
1½ Tbsp peanut oil
2 Tbsp coarsely chopped garlic
1½ tsp salt
8 oz (1 cup) green beans, trimmed
1 tsp sugar (optional)
1. Remove seeds from the peppers and cut into strips.
2. Heat wok or large frying pan and add oil. Add garlic, salt, peppers, and beans. Stir-fry for 2 minutes.
3. Add sugar, if using, and 2 Tbsp water and cook for another 4 minutes or until vegetables are tender. Serve.
