Citrus Ginger Chicken

20 minutes prep time (does not include marinating time) | Serves 4
What you need:
- 1 lb boneless, skinless chicken breasts
- 1/2 c orange juice
- 1/3 c fresh lemon juice
- 1 Tbsp honey mustard
- 2 tsp ginger root, peeled and grated
- 1/8 tsp cayenne pepper
- 1 Tbsp reduced-sodium soy sauce
- 2 large cloves garlic, minced
- 4 bamboo skewers, soaked in water for 20 minutes before cooking chicken
What you do:
- Cut chicken into strips lengthwise and place in a glass bowl. Set aside. In small bowl, whisk together the juices, mustard, ginger, cayenne, soy sauce, and garlic until well combined. Pour over the chicken strips, cover, and marinate several hours or overnight in the refrigerator.
- When ready to cook, thread chicken strips onto the soaked skewers, discarding the marinade. Grill or broil 6 to 8 minutes per side until chicken is done. Serve with your favorite vegetables.
