Mustard-Crusted Salmon

From The Essential Eating Well Cookbook
25 minutes prep time | Serves 4
What you need:
- Cooking oil spray
- 1 1/4 lb center-cut salmon fillets, cut into 4 portions
- 1/4 tsp salt, or to taste
- Freshly ground black pepper, to taste
- 1/4 c reduced-fat sour cream
- 2 Tbsp coarse mustard, like Meaux, English, or Dijon
- 2 tsp lemon juice
- Lemon wedges for garnish
What you do:
- Preheat broiler.
- Line broiler pan or baking sheet with foil. Coat with cooking spray. Place salmon pieces, skin-side down, on prepared pan. Season with salt and pepper.
- Combine sour cream, mustard, and lemon juice in small bowl. Spread evenly over salmon.
- Broil salmon 5 inches from heat source until opaque in center, 10 to 12 minutes. Serve with lemon wedges.
