Veggie Frittata

Ingredients:

  • 2 tablespoons olive oil
  • ½ zucchini squash, sliced
  • 1 bell pepper, chopped
  • 1 small onion, chopped
  • ¼ - ½ teaspoon crushed red pepper, depending on taste
  • 8 large eggs
  • ¼ cup milk (prefer 1%)
  • ½ teaspoon salt
  • ¾ cup Feta cheese

Directions:

  1. In a medium, ovenproof skillet, cook bell pepper, onion and zucchini in olive oil until soft (5 -6 minutes)
  2. In a separate bowl, whisk together eggs, milk and salt.
  3. Pour egg mixture into skillet. Cook, scrambling the mixture until almost set.
  4. Top with feta and place in broiler.
  5. Low broil about 5 minutes, or until center firms.
