Veggie Frittata

Ingredients:
- 2 tablespoons olive oil
- ½ zucchini squash, sliced
- 1 bell pepper, chopped
- 1 small onion, chopped
- ¼ - ½ teaspoon crushed red pepper, depending on taste
- 8 large eggs
- ¼ cup milk (prefer 1%)
- ½ teaspoon salt
- ¾ cup Feta cheese
Directions:
- In a medium, ovenproof skillet, cook bell pepper, onion and zucchini in olive oil until soft (5 -6 minutes)
- In a separate bowl, whisk together eggs, milk and salt.
- Pour egg mixture into skillet. Cook, scrambling the mixture until almost set.
- Top with feta and place in broiler.
- Low broil about 5 minutes, or until center firms.
