Jicama Slaw
10 minutes prep time | Serves 4
What you need:
- 12 oz jicama, peeled and julienned
- 1 large red bell pepper, julienned
- 1 yellow pepper, julienned
- 2 Tbsp lime juice
- 1 Tbsp organic mayonnaise
- 1 garlic clove, mashed
- 1 tsp shredded fresh ginger
- 1 tsp chili powder
- Salt and pepper to taste
- 1/4 c cilantro, finely chopped
- 4 Tbsp pumpkin seeds, for garnish
What you do:
- Combine jicama and peppers in a bowl, then set aside.
- Purée lime juice, mayonnaise, garlic, ginger, and chili powder in a blender. Season to taste with salt and pepper.
- Pour blended dressing over jicama mix, add cilantro, and lightly stir until coated. Sprinkle pumpkin seeds on top.
