Jicama Slaw

Jicama Slaw

10 minutes prep time | Serves 4

What you need:
 

  • 12 oz jicama, peeled and julienned
  • 1 large red bell pepper, julienned
  • 1 yellow pepper, julienned
  • 2 Tbsp lime juice
  • 1 Tbsp organic mayonnaise
  • 1 garlic clove, mashed
  • 1 tsp shredded fresh ginger
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1/4 c cilantro, finely chopped
  • 4 Tbsp pumpkin seeds, for garnish

What you do:
 

  1. Combine jicama and peppers in a bowl, then set aside.
     
  2. Purée lime juice, mayonnaise, garlic, ginger, and chili powder in a blender. Season to taste with salt and pepper.
  3. Pour blended dressing over jicama mix, add cilantro, and lightly stir until coated. Sprinkle pumpkin seeds on top.
