Stuffed Artichoke Salad
45 minutes prep time | Serves 4
What you need:
- 4 medium artichokes
- 2 bags (4 oz ea) mixed greens
- 1 medium tomato, chopped
- 1 avocado, chopped
- 2 scallions, green parts only, finely sliced
- Olive oil or vinaigrette dressing
- 1/4 lb feta, crumbled
What you do:
- Wash, trim, and cook artichokes, then prepare to stuff (for direction on preparing an artichoke, click here)
- In a large bowl, combine mixed greens with tomato, avocado, and scallions. Lightly stuff mixture into artichoke “bowls.” Drizzle with olive oil or your favorite vinaigrette dressing. Top with feta.
