Sudachi Ponzu Salad Dressing

Ingredients:
1/4 cup Sudachi Ponzu (green label)
2 tablespoon extra virgin olive oil
1 tablespoon honey
1 tablespoon finely chopped shallots
1/2 teaspoon dry mustard
1 clove garlic, minced
3/4 teaspoon salt
1/4 teaspoon ground pepper
1 ripe avocado
1 can (15 oz) mandarin oranges, drained
1 package (8-10 oz) salad greens
1/2 cup toasted pecans
1/3 cup feta cheese

Directions:
1. Combine ingredients 1-8 (makes about 1/2 cup of salad dressing)
2. Toast pecans at 350 degrees (F) for 1 minute.
3. Combine salad dressing and avocados.
4. In salad bowl combine greens, mandarin oranges, pecans, feta cheese and toss with dressing.

Makes 8 servings.
