Ricotta and Pesto Wraps
10 minutes prep time | Serves 4
What you need:
- Wax paper or aluminum foil
- 4 (8-inch) whole-wheat tortillas
- 1/4 c pesto sauce
- 1 c ricotta cheese
- 4 c salad mix or lettuce
- 1 medium Roma tomato (4 inches long), chopped
What you do:
- Place each tortilla in the center of a sheet of wax paper or foil (about 12x14 inches). Spread a tablespoon of pesto in a rectangular shape in the middle of each tortilla. Spread a quarter of a cup of ricotta on top of that, adding a cup of greens and one quarter of the tomato on top. Roll up the tortilla and wrap the paper or foil tightly to keep it rolled. Unwrap paper or foil from one end while eating, so that the sandwich wrap stays together.
