Southwestern Burger

What you need:
 

  • Vegetable oil cooking spray
     
  • 1 pound ground sirloin
     
  • 1/2 red bell pepper, cored, seeded and grated
     
  • 1 egg white
     
  • 1 teaspoon salt
     
  • 1/2 teaspoon hot sauce
     
  • 1/2 cup fresh corn kernels
     
  • 1 cup diced tomato
     
  • 2 tablespoons chopped fresh cilantro
     
  • 1 tablespoon fresh lime juice
     
  • 4 whole-wheat burger buns
     

What you do:

  1. Coat grill with cooking spray; heat on high.
  2. Mix sirloin, bell pepper, egg white, 1/2 tsp of the salt and hot sauce in a bowl.
  3. Form into four 4-inch patties. Set aside.
  4. Cook corn with 1 tbsp water in microwave 30 seconds; mix with tomato, cilantro, juice and remaining 1/2 tsp salt in another bowl.
  5. Grill burgers 12 minutes, turning halfway through, until no longer red in the center. Place on buns and top with salsa.
  6. Serve with Grilled Tricolor Peppers.
