Turkey-Waldorf Pita Pocket

20 minutes prep | Serves 4
What you need:
- 1 c cooked turkey breast, diced
- 1/2 medium-sized apple, peeled, cored, and diced
- 1 medium-sized celery stalk, trimmed and diced
- 2 Tbsp raisins
- 2 Tbsp sliced almonds, toasted
- 3 Tbsp reduced-fat sour cream
- 1 Tbsp reduced-fat mayonnaise
- 1 tsp lemon juice
- Salt and pepper to taste
- 2 small whole-wheat pita breads, cut in half to form pockets
What you do:
- In medium-sized mixing bowl, combine turkey, apple, celery, raisins, and almonds.
- In small mixing bowl, whisk together remaining salad ingredients. Gently fold them into turkey mixture until well combined.
- Spoon salad into the four pita pockets and serve immediately or wrap in plastic and refrigerate for a packed lunch.
