Turkey-Waldorf Pita Pocket

20 minutes prep  |  Serves 4

What you need:

  • 1 c cooked turkey breast, diced
  • 1/2 medium-sized apple, peeled, cored, and diced
  • 1 medium-sized celery stalk, trimmed and diced
  • 2 Tbsp raisins
  • 2 Tbsp sliced almonds, toasted  
  • 3 Tbsp reduced-fat sour cream
  • 1 Tbsp reduced-fat mayonnaise
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • 2 small whole-wheat pita breads, cut in half to form pockets     

What you do:

  1. In medium-sized mixing bowl, combine turkey, apple, celery, raisins, and almonds.
  2. In small mixing bowl, whisk together remaining salad ingredients. Gently fold them into turkey mixture until well combined.
  3. Spoon salad into the four pita pockets and serve immediately or wrap in plastic and refrigerate for a packed lunch.
