Baked Sweet Potato Fries

2 sweet potatoes, peeled
2 to 3 Tbsp vegetable oil
Sea salt
Freshly ground pepper to taste
Preheat oven to 350° or fire up the barbecue. Cut sweet potatoes into long, uniform pieces. In a medium mixing bowl, stir together sweet potatoes, oil, salt, and pepper until the potatoes are well coated. Arrange a single layer of potatoes in a shallow baking dish. Bake 20 to 30 minutes or until nice and crispy.
