Maple Roasted Yams with Pecans and Dried Cranberries
Ingredients:
2 large yams, peeled and diced
1 cup pecan halves
1/4 cup extra virgin olive oil
1/4 cup maple syrup
1/4 teaspoon sea salt
1/2 cup dried cranberries
Preheat oven to 400 degrees.
Toss all ingredient together, except cranberries, and in a 9 x 13-inch baking dish and bake for 30 minutes. Add the cranberries, lightly toss and bake for an additional 15 minutes.
