Warm Asparagus and Mushrooms

20 minutes prep time | Serves 4

Ingredients:
1 lb asparagus spears, cut into 1-inch pieces
1 Tbsp no-salt-added vegetable broth
4 c mushrooms, thinly sliced
½ c onion, chopped
1 Tbsp garlic, minced
¼ c fresh lemon juice
2 to 4 Tbsp flaxseed oil

What you do:
1. Prepare asparagus by gently bending stalks until they snap. Discard bottom piece and slice rest on diagonal. Steam for about 5 to 6 minutes until crisp but tender. Set aside.
2. Heat broth, mushrooms, onion, and garlic in nonstick skillet, cooking until soft.
3. Add asparagus and drizzle with lemon juice. Heat through over low to medium heat.
4. Remove from skillet to serving platter and allow to cool. Drizzle ½ to 1 tablespoon flaxseed oil over each serving.
