Pasta Fagioli Soup
Ingredients:
2 Tbsp olive oil
2 cloves garlic, finely minced
1 medium onion, chopped
2 stalks celery, chopped
18 oz vegetable broth
2 cups water
1/2 tsp. dried basil
1 tsp. dried oregano
1 tbsp. dried parsley
1 tsp. salt
Pepper
1 (28 oz.) can peeled tomatoes (prefer Italian)
6 oz tomato paste
1 cup white kidney beans (drained and rinsed)
3 cups pasta (macaroni or other small shape)
Directions:
Sautee garlic, onion, celery in olive oil
Add vegetable broth, water, basil, oregano, parsley, salt & pepper, tomatoes, tomato paste
Bring to boil and simmer for 10-15 minutes
Return to boil and add pasta
Just before serving add beans
