Turkey Meatloaf

Ingredients

Meatloaf

  • Oil
  • 12 cup rolled oats
  • 14 cup milk
  • 1 large egg
  • 1 small onion, minced
  • 3 garlic cloves, minced
  • 2 tsp Dijon mustard
  • 2 tsp Worcestershire sauce
  • 12 cup chopped fresh parsley
  • Salt and freshly ground black pepper
  • 1 lb ground turkey

Glaze

  • 1 cup ketchup
  • 2 Tbsp brown sugar
  • 2 12 Tbsp cider vinegar
  • 12 tsp hot sauce

Directions

  1. Place an oven rack 4 inches from the broiler element. Place another rack in the middle of the oven. Preheat broiler to high. Oil a rimmed baking pan with oil.
  2. In the bowl of a food processor fitted with its blade attachment, pulse oats until ground into a flour. Transfer ground oats to a large bowl. Add milk, egg, onion, garlic, mustard, Worcestershire sauce, parsley, and salt and pepper to taste. Add turkey and thoroughly combine mixture. Set mixture aside.
  3. To make glaze, whisk together ketchup, brown sugar, vinegar, and hot sauce in a bowl. Set aside 14 cup of glaze. Heat remaining glaze in a saucepan over medium heat for 5 minutes, until slightly thickened. Set reduced glaze aside.
  4. Transfer mixture to prepared baking pan, and shape into a 9x5-inch loaf pan. Broil on upper rack until well browned, about 5 minutes. Brush the 14 cup of reserved glaze over top and sides of meatolaf. Return pan to oven and broil until glaze begins to brown, about 2 minutes.
  5. Transfer meatloaf on pan to the middle oven rack. Reduce oven temperature to 350˚. Bake until center of meatloaf is 165˚, about 30 to 40 minutes. Remove from oven and let meatloaf rest for 15 minutes. Slice and serve with reduced glaze.

Notes

If you have celiac disease or a serious gluten allergy, look for oats that are certified gluten free.

Broiling meatloaf as a first step before baking helps form a tasty crust and keeps the loaf moist and tender. Ground oats serve as a gluten-free binder in place of traditionally used bread crumbs.
