Flourless Chocolate Cake

Ingredients
  • Cooking oil spray
  • 4 oz bittersweet chocolate
  • 1 cup unsalted butter, softened
  • 4 eggs
  • 12 cup unsweetened cocoa, sifted
  • 34 cup sugar
  • 1 Tbsp powdered sugar
  • 12 cup fresh berries (if you use frozen, thaw & drain)
Directions
  1. Preheat oven to 350°.
  2. Line a 9-inch round cake pan with parchment paper or foil cut to exact size. Spray with cooking oil spray and lightly flour.
  3. Coarsely chop the bittersweet chocolate and melt with the butter in a microwave oven on High for two minutes. Stir with a wooden spoon until all of the chocolate has melted and the mixture is smooth.
  4. Beat the eggs until thick and then stir in sifted cocoa and sugar. Beat mixture until thick and creamy.
  5. Add the melted butter and chocolate mixture, and beat again until well blended.
  6. Pour the mixture into the prepared pan and bake for 40 minutes or until a toothpick inserted in the center comes out clean.
  7. Place cake on cooling rack for 10 minutes before turning it onto a serving plate. When cool, sprinkle with the confectioners' sugar, using a sifter, and garnish with berries.

Ingredients
  • 15 oz chocolate (65 to 80 % cocoa), chopped
  • 7 oz unsalted butter, chopped
  • 5 eggs
  • 2 Tbsp water
  • 12 cup sugar
  • 1 tsp salt
Directions
  1. Preheat oven to 350°. Line bottom of a 9-inch springform pan with parchment paper.
  2. Melt chocolate and butter in a double boiler, stirring occasionally. Pour chocolate-butter mixture into bowl of a stand mixer (or just a large bowl if you’re using a hand mixer).
  3. Add eggs and mix at low speed, scraping bowl as needed, until mixture is completely smooth, 2 to 5 minutes.
  4. Pour water into a small saucepan. Add sugar and salt. Cook over medium-low heat until sugar and salt dissolve (a minute or two), swirling pan to aid in even cooking.
  5. With mixer at low speed, stream melted sugar mixture into chocolate mixture. When all sugar is incorporated, turn mixer up to medium-high speed and mix until batter is smooth and shiny, about 3 minutes.
  6. Scrape batter into springform pan. Bake for 30 to 35 minutes, until edges look set but center still looks shiny. Let cool before serving.

Apple Pie Apples

Ingredients

Apple Pie Filling

  • 6 Granny Smith apples
  • 4 tsp cinnamon
  • 34 cup sugar
  • 2 Tbsp brown sugar

Pie Crust

  • 1 14 cup all-purpose flour
  • 14 tsp salt
  • 12 cup butter, chilled and diced
  • 14 cup ice water
Directions
  1. Prepare the pie crust: In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. (I used a fork and finished with my hands.) Stir in water, a tablespoon at a time, until mixture forms a ball. Wrap dough ball in plastic and refrigerate while you are excavating the apple.
  2. Mix cinnamon, sugar, and brown sugar together in a bowl
  3. Cut the top off each apple and scoop out the insides. Leave about 12 inch of the apple on the peel. (I found a small melon baller to work best.)  Save the cut out apple parts
  4. Dice the cut out apple pieces into uniform size pieces. 
  5. Roll apple in the cinnamon and sugar mixture
  6. Retrieve dough from refrigerator. On a floured surface, roll dough out to 18 to 14 inch thick. Using pizza cutter, slice dough into 12 inch strips
  7. Fill apple bowls with prepared apples.
  8. Weave pie crust strips over the top of each apple. 
  9. Sprinkle tops with sugar.
  10. Add water to the bottom of a 12 by 8 pan – just enough to barely cover the bottom. Place apples in pan and cover with foil.
  11. Bake at 350 for 20 minutes, covered.
  12. Remove foil and bake another 15 minutes or until crust is golden brown.
